Ice-Cream Pilot Plant

With the success installation of Ice-cream plant project in the Food Technology department, practical cum research based aspect for undergone students through dairy based operations and product development activities get uplifted. Student are able to grasp all the pasteurization, homogenization, ageing vat and cooling section working lively hence put them all on to more clarity side regarding the concept. This plant is itself unique and novel that nowhere exist in nearby in any of learning institute. Plant was established in 2018 involving total expenditure of around 18,00,000/- INR, keeping in mind the learning exposure for the students. Students were guided timely with frequent trial on to them through application expert and engineers from GOMA and NDRI Karnal. While in the research trial many variants of ice-cream are under the hit run that are sensory evaluated time to time through faculty and student members of concern expertise.

Recently, production trial was initiated on 10th March, 2021. Mr. Ajay Kumar is the technical person from National Dairy Research Institute, Karnal who has initiated this demonstration camp for B.Voc Food Processing and M.Sc Food Technology students with all the technical expertise involved in it. Plant was initially undergone CIP process. Clean fresh full fat milk (6.5% Fat) is allowed to pasteurize in to the pasteurizer unit which was diverted afterwards for homogenization (Double stage). All the department students involved in this trial and learn each and every aspect of the operation, working of plant alongwith ice-cream recipe mix preparation.
